* 3 medium sized sweet potatoes
* 1/2 cup cooking oil
How To Make Sweet Potato Chips:
1). Wash and peel sweet potatoes.
2). Using a mandolin slicer, slice the sweet potatoes thinly, about 1/8 inch. You can also use a knife and slice as thinly as possible. Some thick pieces won’t really crisp up. Nevertheless, it will still be yummy.
3).Heat the oil in a pot or in the deep fryer. Oil is hot enough when a potato slice floats immediately after throwing it in the oil.
4). Fry until golden brown, about 2 minutes per batch. Don’t overcrowd the fryer. It might be necessary to adjust the heat settings once you notice that the chips darken so quickly, so its important to keep an eye on them. Drain in paper towels.
Sprinkle with a little salt and serve hot!
