Ginataang Mais or Sweet Corn with Coconut Milk is one of a kind Filipino dessert recipe that is usually served as a snack or merienda. Ginataang Mais, as the name of the food and recipe implies it, mainly consists of a combination of corn (mais) and coconut milk (gata).

Ginataang Mais Recipe Ingredients:
* 1 medium can sweet corn
* 1 can coconut milk
* 3/4 cup glutinous rice or malagkit
* 1/2 cup ripe langka or jackfruit strips (optional but highly suggested)
* 1 cup sugar
* 6 cups water
Ginataang Mais Cooking Instructions:
1). Add enough water and glutinous rice in a pot. Simmer to boil until rice is tender. Stir occasionally to avoid sticking on the pan.
2). Pour in the coconut milk and let it boil.
3). Add langka (jackfruit strips) and sweet kernel corn. Season with sugar according to taste.
4). Simmer for 7-10 minutes or until corn is mushy.
5). Add water if necessary. Adjust sweetness by adding more sugar.
Ginataang mais can be serve as a hot or cold dish. Enjoy.!

Nanay is from Bicol and this meryenda/kakanin is something that she cooks with perfection… missing ginataang mais and using authentic kakang gata or coconut milk from kinudkod na niyog heheheh…

Hmmm.. Im not really fond of this merienda. Not sure, but I not used to eating corn other than its grilled or boiled — on its cob. Haha!
