Humba Recipe

Humba (Braised Pork Belly) Recipe is one of the most popular Filipino authentic dish. A typical Humba dish is served with potatoes and hard-boiled eggs on top of it. To add on it, this recipe do have a distinctive sweetened taste.

Humba – Braised Pork Belly

Below is a typical humba recipe that you may find quite delectable.

Humba Recipe Ingredients :

· 1 lb. pork cut into pieces
· 1/3 cup vinegar
· 1/4 cup packed brown sugar
· 1/4 cup soy sauce
· 1 bay leaf
· 1/4 tsp. pepper or 1 tsp. peppercorns
· 1 cup water
· 3 cloves crushed garlic
· 1 tsp. oil
· salt

Optional – Addon Ingredients

· 3 peeled and quartered potatoes
· hard-boiled eggs

Humba Cooking Procedures :

1). Mix all ingredients in a big pot and boil. Lower heat and simmer for about an hour until pork belly is tender.

2). Add (optional) potatoes and hard-boiled eggs in this dish. Potatoes usually cook about 15 minutes. Choose whether, you like it soft or just tender for you to bite. You may also include it on halfway of cooking.

3). Let the hard boiled egg sits for a few minutes before its done so that the sauces can cover it.

4). Remove the bay leaf and peppercorns before serving. Serve while its hot.

    try 1:1 or equal proportions for 1kg Pork :1cup vinegar, 1cup Soy, 1cup Sugar & 1cup water. simmer in charcoal heat for 1hr. counting begins when it starts to boil. you can never go wrong again even w/o tasting it. by the way just add the other spices as desired.

    I'll cook this next week.. I use tahure but since it is not avlailable in Abu Dhabi, i use tofu instead. I also like it with banana blossoms..
