Beef Morcon Recipe


Beef morcon is an authentic Filipino dish usually served during fiestas and special occasions like Christmas and New Year's eve celebration. What makes this dish special is the ingredients and the process of preparation and cooking it takes to come up with a very flavorful beef morcon.

Beef Morcon Ingredients:

* 1 kl beef, sliced 1/4 inch thick (3 pieces)

* 1/4 kilo ground beef liver

* 200 grams sliced sausages or ham

* 200 grams pork fat (cut is strips)

* 3 hard boiled eggs, sliced

* 100 grams cheddar cheese in strips

* 100 grams grated cheddar cheese

* 2 onions, chopped

* 5 bay leaf (laurel)

* 1/2 teaspoon of ground black pepper

* 1/2 cup vinegar

* 2 teaspoon salt

* 2 cups of water

* 2 meters thread or string (for tying)

Beef Morcon Cooking Instruction:

1). Spread and stretch the sliced beef on your working table.

2). Arrange the filling on the sliced beef: sausage strips, cheese strips, sliced eggs, pork fat and some ground liver.

3). Roll the sliced beef with all the filling inside and secure with a thread or string. Repeat the procedure for the two remaining beef slices.

4). On a pot, place the beef rolls. Put the water, the remaining ground liver.

5). Followed by grated cheese, chopped onions, bay leaves.

6). Add ground black pepper and salt. Cover the pot and bring to a boil. Simmer for one hour.

7). Add the vinegar.

8). Simmer of another hour or until beef is tender.

9). Slice the beef morcon. Arrange on a platter.

10). Top with the sauce/ gravy poured on top.

Filipino Christmas Foods Sidewalk Version

In this post, I will list down authentic Filipino Christmas foods that can be seen and found at the sidewalks. Although, these foods can be cook and sell anytime of the year, it was always at the month of December that they can be seen lined up at the sidewalks. It is like more of a traditional Xmas foods or something, nevertheless, these foods also represent the spirit of Filipino Christmas celebration.

Puto Bumbong

Typically, Christmas can be seen with the colors of red and green. But, to us, Filipinos, Christmas is somewhat associated with the colors of of lilac and yellow. Why? because Christmas heralds the season of the puto bumbong and bibingka.
Puto bumbong is considered a delicacy and a part of Philippines Christmas atmosphere that has a unique preparation.

Bibingka

Bibingka is very popular delicacy here in the Philippines. Typically, rice flour is used in preparation of Bibingka. Before being served, butter or margarine is spread and sugar is sprinkled over the bibingka. It is typically served with grated coconut.

Suman

Suman is a rice cake made from glutinous rice cooked in coconut milk, and often steamed in banana leaves. It is served wrapped in buli or buri palm (Corypha) leaves and usually eaten sprinkled with sugar. Suman do have many kinds or varieties and all of them are being sell at the sidewalks during Christmas season.

We now have the foods and as far as drinks are concerned, the most common type of drinks partnered with above listed delicacy are "tsokolate" and "salabat". Although coffee and water also serves well.

Filipino Christmas Foods

Filipino Christmas celebration won't be complete without those mouth watering dishes. In any special occasion in the Philippines, foods are always the main attraction. Filipinos do celebrate Christmas the earliest and the longest and in such blissful and festive way.

Philippine Christmas preparation starts as early as September or as soon as the "BER" month begins. Christmas season in the Philippines does not only focus on Christmas date itself but also the eve and days before Christmas itself. Filipinos have this "simbang gabi" that usually starts on the 16th of December and ends on the 24th. Filipinos ritually attends the mass for nine consecutive days. Then have a festive celebration of the tradional "Noche Buena" (Christmas Eve).


Enough with my Filipino Christmas informative introduction and lets head over to my very own Top 3 Filipino Christmas Cuisines (comes in any order) .

Kare Kare - This dish is one of my favorites even if its not Christmas. For those who don't know, Kare Kare is a kind of Philippine stew made from peanut sauce with a variety of vegetables, stewed oxtail, beef, and occasionally offal or tripe.

Chicken Adobo - This is a popular dish around the globe. This authentic Filipino recipe or dish is known for its quite distinctive taste. Many people, even not Filipino, simply love this recipe and made it as one of their favorites.

Beef Kaldereta - A dish where ingredients are cuts of pork, beef or goat with tomato paste or tomato sauce with liver spread added to it.I simply love the sauciness of this recipe. Simply delicious for me.
