Filipino Recipes For The Holy Week

Since its Holy Week, Filipinos, specifically, the Catholics, are now starting to practice the good old lent tradition. We, Filipinos are very much known as a solemn observer of the Holy Week. This just shows how faithful and religious we are. This is the Filipino way of reflecting God's lessons and sacrifice that are written at the Holy Bible. Holy Week, according to the traditional beliefs, is the season of repentance and mending of immoral living for many Filipinos.



There are certain sacrificial acts done during the observance. This includes Fasting or limiting one's food intake to one full meal a day and Abstinence or avoidance of eating meat from warm-blooded animals. So meaning to say, Filipinos usually eats fish and vegetables during this season.

Here are some vegetable recipes that you may find interesting, easy and practical to cook during the Holy Week.

Pinakbet
Pinakbet is the contracted form of the Ilocano word pinakebbet, meaning "shrunk" or "shriveled". The basic vegetables used in this dish include native bitter melon, eggplant, tomato, ginger, okra, string beans, lima beans, chili peppers , parda and winged beans. A Tagalog version usually includes calabaza.

Laksa

Shrimp With Ampalaya

Shrimp Cooked With Bitter Gourd

This is a recipe originally posted at MyKitchenCooking.Com by Lanie G. I decided to re-post it here so we can try her own recipe. It looks good and delicious aside from being healthy (because of ampalaya).

According to Lanie G: "I love this recipe and it's my imagination on how to cook shrimp with ampalaya. It's tasty."


Without further ado, here is her very own shrimp with ampalaya recipe.

Shrimp Ampalaya Ingredients:

* 4lbs of head on shrimp
* 5 large Ampalaya
* 1 large tomato
* 1 garlic glove
* 1 small size onion
* oil
* soy sauce
* oyster sauce
* salt
* black pepper

Shrimp Ampalaya Preparation - Cooking Instruction:

1). Wash the shrimp and drain, then put aside.

2). Cut the tomato, onion, garlic then put aside in one plate. Wash and cut the ampalaya and remove the seed, then cut in small pieces just like in the photo. Put aside.

3). Use the big pan and just use the small amount of oil enough to fry the ingredients. Slice the onion, tomato and garlic.

4). Once the oil is warm add garlic, let it brown and add onion and stir until the onion is cook, then add the tomato and stir for a few minutes and add shrimp stir it and wait until about 10 minutes.

5). Add the ampalaya. Mix altogether and cover it for about 5 minutes then add estimate the salt, soy sauce, oyster sauce, pepper. Mixed altogether then cover until the shrimp and ampalaya is cook. Then it will be ready for about 1o minutes.

Serve with white rice.

Laksa Laksa (Bean Noodles with Vegetables)

Laksa Laksa or Bean Noodles with Vegetables is also an all time favorite of mine. This recipe or dish is best partnered with steamed rice and fried fish. This Filipino vegetable recipe is known to be a healthy food and perfect for diet conscious persons.

Check my Laksa recipe below. This will make 4 servings.

Laksa Recipe Ingredients:

* 3 tablespoons vegetable or corn oil
* 1 tablespoon finely minced garlic
* 1 cup finely minced onion
* 1/2 cup cubed pork butt
* 1 cup shelled shrimps (use shells for shrimp juice)
* 1 cup diced squash
* 2 cups string beans cut into 1/2-inch pieces
* one 10-ounce package frozen lima beans
* 1 eggplant, diced and peeled
* 2 cups squash leaves or any green leafy vegetable
* 2 cups sotanghon, in water and drained
* 3 tablespoons patis or 1 tablespoon salt
* 1 teaspoon freshly ground pepper
* 1-1/2 cups shrimp juice or canned shrimp bisque

Laksa Recipe Cooking Procedure:

1). In a large skillet, heat oil and saute garlic and onion. Cook until garlic is brown and onion
transparent.

2). Add pork, shrimps and shrimp juice or bisque. Simmer until pork is
cooked.

3). Add string beans and lima beans.

4). Add eggplant, squash and squash leaves.

5). Add sotanghon. Simmer over moderate heat for 8 minutes.

Season with patis or salt and pepper. Serve hot. Enjoy.

Ginisang Toge is a healthy vegetable dish or recipe. It is a sauteed Mung Bean Sprout with carrots, bell pepper, shrimp, and tofu.

Ensaladang Talong Eggplant Salad

Eggplant Salad or Ensaladang Talong in the Philippines, is a kind of Filipino vegetable salad which consist of carefully grilled eggplant, tomatoes, and onions.

Ensaladang talong is perfect as a side dish and is best if partnered with grilled fish and meat. Eggplant salad best complements main dishes that are dry or fried, like fried pork, fried tilapia and daing na bangus.

Ensaladang Talong (Eggplant Salad) Filipino Recipe

Ensaladang Talong Recipe Ingredients:

* 2 pieces Chinese eggplant (not the fat aubergines commonly)

* 2 medium sized tomatoes

* 1 medium sized onion

* ¾ cup white vinegar

* ½ tsp salt

* ¼ tsp ground black pepper

* 2 tablespoons shrimp paste (bagoong) (optional)

How To Make Ensaladang Talong (Eggplant Salad):

1). Grill the eggplant (or cook directly on stove top). This will result into drier eggplant which is easier to peel.

2). Peel the skin, cut the stem, and mash lightly using a fork.

3). Cube the tomatoes and onion.

4). Combine the chopped tomatoes, onion, mashed eggplant, salt, ground black pepper, and vinegar then toss to mix the ingredients.

5). Top with shrimp paste. (Optional)

Your healthy and delicious eggplant salad is now ready! Enjoy!

Kilawing Sibuyas

Kilawin Sibuyas is one of my personal all time favorite side dish for fried fish. It really adds something extraordinary to any plain fried fish along with hot steamed rice on the plate. Likme, for sure, you will also love this kilawing sibuyas recipe which is, really easy to follow.

Kilawing Sibuyas Recipe Ingredients:

* 1/4 cup cooking oil
* 2 heads garlic, crushed
* 1/2 kilo steamed fish - galunggong, flaked
* 1 kg white onions, sliced thinly
* 1/2 cup vinegar
* 1 tsp. salt
* 1 tsp. black pepper ground
2 pc siling haba, finger-like peppers

Kilawing Sibuyas Cooking Procedure:

1). Heat oil in a wok. Saute garlic and flakes galunggong over high heat.

2). Set aside the garlic and galunggong to one side of the pan. Add the onions. Saute until onions are transparent.

3). Add vinegar, salt and pepper. Blend in the garlic and the galunggong.

4). Add the siling haba (green chilies).

5). Boil uncovered for at least 10 minutes without stirring.

6). Serve immediately after 10 minutes.

Note: You can add more green chilies (siling haba) to make it more hotter.

Adobong Kangkong (River Spinach)

Adobong Kangkong is one of the authentic Filipino dishes that I really love. It was pretty easy and basic to prepare and cook, and for sure, you will love this recipe too.

Adobong Kangkong Ingredients:

* 1 big bowl of kangkong (river spinach)
* 1/4 kilo of pork, cut into small pieces
* 1/4 cup of vinegar
* 1/4 cup soy sauce
* 5 cloves of garlic, minced
* 1 onion, diced
* 2 laurel leaves (bay leaves)
* 1 cup pork stock (broth) or bouillon pork cube dissolved in water
* Salt and pepper to taste

Adobong Kangkong Cooking Procedure:

1). Saute garlic and onions in a big pan then add the pork. Allow the pork to brown and oil for a few minutes.

2). Add a cup of pork stock (or bouillon cube dissolved in water or plain water), laurel leaves, soy sauce, some salt and bring to a boil.

3). Let simmer then add the vinegar. Do not stir for 5 minutes.

4). Add the kangkong stalks first and cook for 1 minute then add the kangkong leaves. Continue cooking until the vegetable is done.

Best serve with hot rice. Enjoy.

Kilawin Labanos (Sauteed Radish)

Kilawin Labanos or Sauteed Radish is one of my personal vegetable dish favorite. I love the sourness on this recipe. Check below the Kilawin Labanos recipe that is good for 4 servings.


Kilawin Labanos Recipe Ingredients:

* 6 medium-size radishes
* 1 clove garlic, crushed
* 1 medium-size tomato, sliced
* 1 medium-size onion, sliced
* 1 tablespoon cooking oil
* 1/2 cup pork, cut in strips
* 1/2 cup shrimps
* 2 tablespoons vinegar
* salt and pepper

Kilawin Labanos Cooking Procedure:

1). Slice radishes very thin.

2). Sprinkle with salt to remove bitterness. Rinse in water, drain
and set aside.

3). Saute garlic, onion, and tomato in oil. Add pork and cook until brown.

4). Cut shrimps lengthwise and add to sauteed pork. Simmer until done.

5). Season with salt and pepper.

6). Add radishes. Cover and simmer for 10 minutes.

7). Add vinegar and more pepper and bring to boil. Serve hot.

Ampalaya Guisado is an authentic Filipino vegetable dish made by sauteing bitter gourd in garlic, onion and tomatoes and finished off by topping with beaten egg. It is a healthy recipe or dish that most of the Filipino loves to eat.

As we all know, Bitter Gourd or Ampalaya is known to lower sugar levels and thus, good for diabetics. Also effective in treating hypertension, constipation, and the juice is said to be a good blood purifier.

Ampalaya Con Carne - Beef Ampalaya

Ampalaya Con Carne is a very popular Filipino vegetable dish. Beef Ampalaya or Ampalaya Con Carne is one of the famous among the Ampalaya dish variety.

Ampalaya is also known as bitter melon or bitter gourd. You can eliminate or at least, lessen the bitterness of this vegetable by washing the sliced fruit on running water and soak them in a container filled with cold water and let it sit for 5-15 minutes before cooking.


Beef Ampalaya Ingredients:

* 1/2 lbs. ampalaya, sliced 1/4" thick crosswise

* 1/2 lbs. beef, cut into strips

* 1 onion, sliced

* 1/2 cup tomatoes, sliced

* 1 tbsp. garlic, pounded

* 1-1/2 cups beef broth

* 3 tsps. soy sauce

* 1 tsp. Worcestershire sauce

* 2 tbsp. flour

* salt and pepper to taste

Cooking Instructions:

1). Cook ampalaya in boiling water until half done and set aside.

2). Boil beef in seasoned water until tender. Drain and set aside. (You can use the broth later)

3). Saute onion, garlic and tomatoes in cooking oil.

4). Add flour and continue stirring to blend well. Add beef broth and continue stirring until it thickens.

5). Add beef and ampalaya. Add seasonings and continue cooking for another 5 minutes.

This recipe makes 4 servings. Enjoy with hot steamed rice.

Filipino Tamales

Tamales is a very well known party/occasion dish in Cavite and Pampanga. This is an original dish by the Spaniards. But then, Filipinos learned how to cook Tamales and added some new twist for a change. Below is the recipe of Filipino version of Tamales.

Filipino Tamales With Boiled Eggs And Sausage

Filipino Tamales Food Recipe


Tamales Recipe Ingredients:

* 3 cups rice
* 5 cups coconut cream (thin & thick together)
* 2 tbsp atchuete seeds
* 2 cups white sugar
* 3 tsp powdered pepper
* 4 tbsp peanut butter

Tamales Topping:

* 1 cup flaked chicken meat (cooked)
* 2 hard boiled eggs
* 1 cup cooked pork (sliced into strips) or 3-4 Vienna Sausage (thin-round slices)

Tamales Cooking Procedure:

1). Toast rice until brown. Grind finely. Add salt and pepper. Set aside.

2). Add achuete coloring to coconut cream. Boil in medium heat stirring constantly. Add powdered rice, stir until well blended and thick.

3). Separate 1/4 of cooked mixture and add to this the peanut butter. This mixture is for topping. For each tamales, put in 2-3 tablespoons of cooked mixture on two pieces of wilted banana leaves; top with 1 tablespoon peanut-butter mixture, 1-2 slices of hard-boiled egg, flaked chicken meat and strips of pork or sausage.

4). Wrap to form a square and tie with a string. In a deep pan, put water enough to cover tamales.

5). When water boils, put in tamales. Cover. Cook for 1 hour. Drain.

Laing (Taro Leaves In Coconut Milk)

Laing is another authentic recipe originated from Bicol region. As I have said on my previous post(s), Bicolanos are one of the greatest cooks or chefs ever, making this dish as one of the most sought after Filipino recipe.

The main ingredient of this recipe is dried taro root (dahon ng gabi) cooked with coconut milk and red chili. You can include shrimp paste with pork on this one. But if you are health and diet conscious, the plain Laing recipe alone will be the best choice for you.

Laing Recipe Ingredients:

* 30 pieces gabi (taro) leaves, dried and shredded
* 1/2 kilo pork, diced
* 1/4 cup shrimp paste (bagoong)
* 5 cloves garlic, minced
* 2 red onions, chopped
* 2 tablespoons ginger, minced
* 5 jalapeno pepper, sliced
* 1 cup coconut cream (kakang gata)
* 2 cups coconut milk (gata)
* 2 tablespoons of oil
* 1 teaspoon salt

Laing Cooking Instructions:

1). In a casserole, sauté garlic, ginger and onions then add the pork.

2). Mix in the gabi (taro) leaves.

3). Pour in the coconut milk (kakang gata) and bring to a boil then simmer for 15 minutes.

4). Add jalapeno, bagoong, and salt. Simmer for another 5 minutes.

5). Add the coconut cream and continue to simmer until oil comes out of the cream.

Best serve hot with plain white rice.

Dinengdeng

Dinengdeng is an authentic Ilocano dish or recipe. The main characteristic of this dish is the boiled vegetable with bagoong na isda dish which is sweetened with kamote.

Dinengdeng is similar to pinakbet and bulanglang. But unlike pinakbet or bulanglang, dinengdeng contains much fewer vegetables and contain more soup base.

This dish is also considered as one of the healthiest diet recipe of Filipinos.

Dinengdeng Recipe Main Ingredients:

* 2-3 t`sp. bagoong na isda
* 1 small size cubed kamote
* grilled or fried fish, sliced crosswise
* salt
With combination but not limited of the following vegetables:
* kalabasa, cut into wedges
* okra, cut into wedges
* upo, cut into wedges
* ampalaya, cut into wedges
* eggplant,cut into wedges
* sigarillas,cut into wedges
* sitaw. cut into 2” lengths
* saluyot tops, leaves
* camote tops, leaves
* malunggay leaves
* squash tops, leaves, flowers
* bamboo shoots, sliced, boiled

Dinengdeng Cooking Instruction:

1). Dilute bagoong na isda in 1-2 cups of water, strain in a sheave and pour solution in a casserole.

2). Bring to boil and simmer for 3-5 minutes, remove all scams that rises.

3). Add in kamote cubes and simmer for another 2-3 minutes. Add in all thevegetables, vegetables that will require longer time to cook at the bottom and leafy vegetables at the top.

4). Add more water if necessary. Season with salt if required.

5). Simmer until vegetables are cooked but firm.

6). Top with grilled or fried fish and keep covered for a minute.

Serve dinengdeng while its hot. Enjoy this healthy recipe!

Bulanglang

Bulanglang is an authentic vegetable recipe in the Philippines. Sometimes, bulanglang dishes are being mistaken as Pinakbet. Bulanglang is much more soupier and includes dark leafy vegetables making it as a healthy and diet friendly recipe. Also, bulanglang is a very flexible dish, meaning you can add or vary the included vegetables on the recipe. Fish is sometimes included on the dish.

Bulanglang Recipe Recommended Ingredients:

* 2 tablespoons lard
* 1 teaspoon minced garlic
* 1/4 cup minced onions
* 1/2 cup red tomatoes, sliced
* 2 cups rice washings
* one medium-sized milkfish sliced crosswise into four pieces
* 1 cup squash, diced
* 1 cup eggplant, diced
* 1 cup ampalaya, sliced into strips
* 1/2 cup malunggay leaves
* 1/2 cup kangkong tops
* 1/2 teaspoon ginger, chopped
* 3 tablespoons of bagoong

Bulanglang Cooking Instructions:

1). Use the lard to saute the garlic, onions, tomato and ginger.

2). Add the two cups of rice washings. Bring to a boil.

3). Season with the bagoong, and add the milkfish.

4). Simmer for five minutes and remove the fish.

5). Add the vegetables starting with the squash, which takes the longest to cook. The leafy vegetables should be added last.

6). As soon as the vegetables are done, remove from heat and transfer to a serving dish.

Now, you can place the fish on top of the vegetables and serve as soon as possible.

Hototay Soup

Hototay soup is a common dish for Filipinos. Hototay soup, originally, is a Chinese soup. But now, expect to see it on the menu list of some Filipino restaurants and eateries.

Hototay soup is a combination of meat-and-vegetables with slivers of pork meat, pork liver, chicken gizzards, dumplings, mushrooms and vegetables in a clear broth garnished with raw eggs. Some find it exotic, but I said; its authentic.!

Hototay requires a lot of time in terms of preparation. The ingredients will undergo the cutting, chopping, slicing and mincing efforts. But the cooking it self, its pretty basic and simple.


Hototay Soup Recipe Ingredients:

* 1 onion, chopped
* 4 cloves garlic, minced
* 1 cup sliced pechay Baguio
* 1 cup sliced carrot
* 1 cup sliced celery
* 1 cup pork, cut into strips
* 1 cup chicken meat, cut into strips
* 1 cup liver, cut into strips
* 1/2 cup shrimps, shelled
* 10cups broth
* 1/2 cup chopped green onions
* salt and pepper to taste
* oil for sauteing
* egg

Hototay Soup Cooking Instructions:

1). In a saucepan, saute garlic and onion.

2). Add chicken, pork, liver and 3 cups of water.

3). Boil the meat until tender.

4). Add the remaining ingredients except the egg and seasonings.

5). Sprinkle the salt and pepper until the desired taste.

6). Put soup in a large bowl. Break an egg over it before serving.

Serve it while its hot.
