Sweet Potato (Kamote) Pudding

Here is a simple and basic recipe for our very own sweet potato pudding or kamote pudding. This is a great recipe for merienda or even as a dessert.

Sweet Potato Kamote Pudding Recipe Ingredients:

* 3 pieces of medium sized sweet potatoes
* 4 cups of whole milk
* 1 can of condensed milk
* 1 tablespoon of brown sugar
* 1 cup of white sugar
* 1 tablespoon unsalted butter
* blanched almonds and raisins
* 1/4 teaspoon cardamon powder (optional)

How To Make Sweet Potato Pudding:

1). Peel the skin of sweet potatoes and wash thoroughly with water.

2). Cut the potatoes into small cubes. Boil the whole milk in a heavy bottomed skillet on medium heat.

3). Add sweet potatoes to the boiling milk and lower heat. Cook it until sweet potatoes are well done. Stir occasionally.

4). Remove from heat and mash the boiled potatoes until smooth.

5). In a separate skillet, heat 1 tablespoon unsalted butter. Add your blanched almonds and raisins and fry on very low heat until they turn light brown. Remove from skillet to a plate and set aside.

6). In the same hot skillet, add brown sugar and cardamon powder, keeping heat low. Add now the mashed sweet potatoes. Also add the condensed milk and sugar.

7). Turn heat to medium, cook, stirring constantly until the consistency becomes desirably thick.

8). Remove from heat. Immediately transfer the dessert to a serving bowl and let set to cool.

9). Garnish with almonds and raisins. Chill in refrigerator.
